Rice Cooking

    Cook the Rice

    In a saucepan, combine 1 cup of white rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Pico de Gallo Preparation

    Make the Pico de Gallo

    Chop the tomatoes, onion, and cilantro finely. In a bowl, mix together the chopped ingredients, lime juice, and salt to taste. Set aside.

Grilled Onion Preparation

    Grill the Onion

    Slice the onion into rings. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onion rings and sprinkle with salt. Cook for about 5-7 minutes until they are soft and slightly caramelized.

Steak Cooking

    Cook the Steak

    Season the steak with salt and black pepper. Heat 1 tablespoon of olive oil in a grill pan over high heat. Cook the steak for about 4-5 minutes on each side for medium rare, or to your desired doneness. Let it rest for a few minutes before slicing thinly against the grain.

Cilantro Lime Sauce Preparation

    Make the Cilantro Lime Sauce

    In a bowl, combine the sour cream, lime juice, and chopped cilantro. Mix well and set aside.

Queso Sauce Preparation

    Prepare the Queso Sauce

    In a saucepan, combine the cheddar cheese, cream cheese, and milk over medium heat. Stir until melted and smooth. Add diced jalapeño and salt to taste. Keep warm.

Burrito Assembly

    Assemble the Burrito

    On a large flour tortilla, layer the cooked rice, grilled onion, sliced steak, pico de gallo, shredded jack cheese, and cilantro lime sauce. Roll the tortilla tightly, tucking in the ends. Place the burrito seam side down on a plate and drizzle with warm queso sauce before serving.
