Method

Preparing the Salmon

    1. Prepare the Salmon

    In a small bowl, mix chili powder, lime zest, olive oil, salt, and black pepper to create a rub. Pat salmon fillets dry and evenly coat them with the chili-lime rub.

    2. Sear the Salmon

    Heat a skillet over medium-high heat and add a little olive oil. Once hot, add the salmon fillets, skin side down. Sear for 4-5 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until cooked through. Remove from heat.

Making Mashed Potatoes

    3. Boil Potatoes

    Peel and chop potatoes into uniform pieces. Boil in salted water for 15-20 minutes until tender. Drain well.

    4. Mash the Potatoes

    In a large bowl, add boiled potatoes, butter, heavy cream, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning as needed.

Preparing Sun-Dried Tomato Salsa

    Chop sun-dried tomatoes and red onion. In a bowl, combine sun-dried tomatoes, red onion, fresh basil, balsamic vinegar, olive oil, salt, and black pepper. Mix well and set aside.

Grilling Asparagus

    Toss asparagus spears with olive oil, salt, and black pepper. Grill over medium-high heat for 5-7 minutes until tender and slightly charred.

Making Romesco Sauce

    7. Prepare Romesco Sauce

    In a food processor, combine roasted red peppers, almonds, garlic, olive oil, red wine vinegar, salt, and black pepper. Blend until smooth. Adjust seasoning if necessary.

Fried Garlic Crunch

    Thinly slice garlic cloves. In a skillet, heat olive oil over medium heat. Add garlic and fry until golden brown and crispy, about 2-3 minutes. Drain on paper towels.

Plating

    On each plate, add a scoop of mashed potatoes, top with seared salmon, spoon sun-dried tomato salsa over the salmon, and drizzle with romesco sauce. Add grilled asparagus on the side, garnish with microgreens, and sprinkle with fried garlic crunch.
