Method

Cheese Dip Preparation

  1. 1

    Melt the cheeses

In a medium saucepan over medium heat, combine the cheddar, Monterey Jack, and cream cheese. Stir continuously until the cheeses have melted and are well combined.

  2. 2

    Add milk and seasonings

Gradually add the milk while stirring until the mixture is smooth. Then, add the diced jalapeños, garlic powder, cumin, and salt to taste. Continue stirring until fully incorporated and heated through.

Pico de Gallo Preparation

  1. 3

    Combine ingredients

In a mixing bowl, combine the diced tomatoes, onion, chopped cilantro, and lime juice. Mix gently to combine.

  2. 4

    Season

Add salt to taste and mix again. Let it sit for at least 10 minutes to allow the flavors to meld.

Serving Preparation

  1. 5

    Grill the tortillas

Warm a skillet over medium heat. Place tortillas one at a time and grill for about 30 seconds to 1 minute on each side until warm and slightly crispy.

  2. 6

    Serve

Arrange the corn chips on a serving platter. Serve the melted cheese dip in a bowl, topped with pico de gallo. Offer grilled tortillas on the side for dipping.
