Marinate the Chicken
In a large bowl, combine mezcal, lime juice, honey, chili powder, and chopped cilantro. Add the chicken wings and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for more flavor.

Season the Wings
After marinating, remove the wings from the marinade and pat them dry with paper towels. Season both sides with salt, black pepper, and garlic powder.

Fry the Wings
Carefully add the wings to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 8-10 minutes for bone-in wings, or 5-7 minutes for boneless wings, until golden brown and crispy. Use a slotted spoon to transfer the wings to a paper towel-lined plate to drain excess oil.

Toss in Sauce (optional)
If desired, toss the cooked wings in your choice of sauce (Buffalo, BBQ, or Teriyaki) in a large bowl until evenly coated.
