Chicken Wings

Mezcal Marinade

Sauce Options (choose one)

Method

Preparation

  1. 1

    Marinate the Chicken

In a large bowl, combine mezcal, lime juice, honey, chili powder, and chopped cilantro. Add the chicken wings and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for more flavor.

  2. 2

    Season the Wings

After marinating, remove the wings from the marinade and pat them dry with paper towels. Season both sides with salt, black pepper, and garlic powder.

Cooking

  1. 3

    Heat Oil for Frying

In a large deep skillet or fryer, heat the olive oil over medium-high heat until it reaches 350°F (175°C).

  2. 4

    Fry the Wings

Carefully add the wings to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 8-10 minutes for bone-in wings, or 5-7 minutes for boneless wings, until golden brown and crispy. Use a slotted spoon to transfer the wings to a paper towel-lined plate to drain excess oil.

  3. 5

    Toss in Sauce (optional)

If desired, toss the cooked wings in your choice of sauce (Buffalo, BBQ, or Teriyaki) in a large bowl until evenly coated.

Serving

  1. 6

Serve the wings hot, garnished with additional cilantro if desired. Enjoy with your favorite dipping sauce!
