Afterburner Buffalo Sauce
Chili Jefe Dry Rub
Lime & Garlic-Sazon Sauce
Honey Habanero Sauce

Preparation

Marinate the Wings
In a large bowl, combine chicken wings, mezcal, salt, and black pepper. Mix well and let marinate for at least 30 minutes.

Heat the Oil
In a deep pan or fryer, heat vegetable oil to 375°F (190°C).

Fry the Wings
Carefully add the marinated wings to the hot oil in batches, avoiding overcrowding. Fry for 8-10 minutes until golden brown and crispy.

Drain and Season
Remove the wings from the oil and drain on paper towels. If using the Chili Jefe Dry Rub, toss the wings in the rub while still hot.

Toss in Sauce
For the Afterburner Buffalo sauce, melt butter in a saucepan, add hot sauce, garlic powder, and vinegar. Toss wings in the sauce. For Lime & Garlic-Sazon, blend lime juice, garlic, cumin, olive oil, and salt, then toss wings. For Honey Habanero, blend honey, chopped habanero, lime juice, and salt, then toss wings.
Serving

Serve the wings hot with your choice of sauce on the side or tossed in the sauce. Enjoy!
