Preparation
- 1
Soak the Rice
In a large bowl, combine the long grain white rice and 2 cups of water. Let it soak for at least 4 hours or overnight to soften the rice.
- 2
Blend the Mixture
After soaking, drain the rice and add it to a blender along with the remaining 2 cups of water and the cinnamon stick. Blend on high until the rice is finely ground, about 1-2 minutes.
- 3
Strain the Mixture
Pour the blended rice mixture through a fine mesh strainer or cheesecloth into a pitcher or large bowl. Use a spatula to press down on the solids to extract as much liquid as possible.
Flavoring
- 4
Add Sweeteners and Flavorings
To the strained rice water, add the vanilla extract, sugar, milk, ground cinnamon, and a pinch of salt. Stir well until the sugar is completely dissolved.
- 5
Chill
Refrigerate the horchata for at least 2 hours to chill and allow the flavors to meld together.
Serving
- 6
Serve
Serve the horchata over ice, and stir well before serving. Optionally, sprinkle some ground cinnamon on top for garnish.
