Main Preparation

    Cook the Chorizo

    In a skillet over medium heat, add the chorizo and cook until browned and fully cooked, about 8-10 minutes. Break it apart with a spatula as it cooks.

    Prepare the Potatoes

    While the chorizo is cooking, peel and dice the potatoes into small cubes. Boil them in salted water for about 10-12 minutes until fork-tender, then drain.

    Cook the Bacon

    In a separate pan, cook the bacon until crispy, about 5-7 minutes. Remove from heat and chop into small pieces.

Cilantro Avocado Crema Preparation

    Blend the Crema

    In a blender, combine the avocado, fresh cilantro, lime juice, and sour cream. Blend until smooth and creamy. Adjust seasoning with salt if needed.

Pickling Fresno

    Prepare the Pickled Fresno

    Slice the Fresno chilies into rings and place them in a jar. In a small saucepan, combine the white vinegar, water, sugar, and salt. Bring to a boil, then pour over the chilies in the jar. Let it sit for at least 30 minutes.

Assembly

    Combine and Serve

    In a large bowl, combine the cooked chorizo, potatoes, and bacon. Mix well. Serve topped with cilantro avocado crema and pickled Fresno chilies.
