Preparation of Ancient Grain Blend

    Cook Quinoa

    Rinse quinoa under cold water. In a saucepan, combine quinoa, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

Making Pineapple Salsa

    Combine Salsa Ingredients

    In a bowl, mix diced pineapple, finely chopped red onion, chopped cilantro, lime juice, and salt. Stir to combine and set aside.

Preparing Chipotle Aioli

    Mix Aioli Ingredients

    In a small bowl, combine mayonnaise, chipotle powder, lime juice, and minced garlic. Stir until well mixed and set aside.

Cooking Salmon

    Sear the Salmon

    Season salmon fillets with olive oil, lime juice, chipotle powder, salt, and black pepper. Heat a skillet over medium-high heat and add the salmon skin-side down. Cook for 4-5 minutes on each side until cooked through and golden brown.

Assembling the Bowl

    Build the Bowl

    In each serving bowl, place a scoop of the ancient grain blend as the base. Top with seared salmon, pineapple salsa, sliced cucumber, halved grape tomatoes, and a dollop of avocado hummus. Drizzle with chipotle aioli and garnish with fresh cilantro leaves.
