Marinating the Chicken

Marinate the Chicken
In a large bowl, combine chicken thighs, chili powder, paprika, garlic powder, salt, black pepper, honey, soy sauce, and lime juice. Mix thoroughly to coat the chicken evenly.

Refrigerate
Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for the best flavor.
Preparing the Fried Chicken

Make the Coating
In a separate bowl, whisk together the all-purpose flour, cornstarch, salt, black pepper, and baking powder.

Prepare the Wet Mixture
In another bowl, beat the eggs and whisk in the buttermilk until combined.

Coat the Chicken
Remove the marinated chicken from the refrigerator. Dip each piece into the wet mixture, then dredge it in the flour mixture until fully coated.

Heat oil in a deep skillet or fryer to 180°C (350°F). Fry the chicken in batches until golden brown and cooked through, about 6-8 minutes per side.

In a blender or food processor, combine guava paste, sour cream, and lime juice. Blend until smooth.

On a serving plate, place a piece of fried chicken. Top it with guava crema, crumbled cooked bacon, fresh lettuce, and shredded jack cheese.
