Prepare the Chicken
Cut the chicken breasts into strips, approximately 1 inch wide.

Bread the Chicken
Dip each chicken strip first into the flour, shaking off any excess. Then, dip it into the beaten eggs, and finally coat it with the breadcrumb mixture. Place the breaded chicken strips on a plate.

Fry the Chicken
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded chicken strips in batches, without overcrowding the pan. Fry until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

Prepare the Potatoes
Wash and peel the russet potatoes, then cut them into fry shapes, about 1/4 inch thick.

Heat the Oil
In a large heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the potato fries to the hot oil in batches. Fry until they are golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and place on paper towels to drain excess oil.

While the fries are still hot, sprinkle with salt to taste.
