Cooking the Rice

Cook the Rice
Add the Mexican rice and Mexican seasoning to the saucepan, stirring to coat the rice with the oil and aromatics. Pour in 2 cups of water and bring to a boil. Reduce heat to low, cover, and simmer for about 20 minutes, or until the rice is cooked and the water is absorbed.
Preparing the Beans

Heat the Black Beans
In a small saucepan, combine the cooked black beans with 1 teaspoon of cumin and salt to taste. Heat over medium heat until warmed through, about 5 minutes, stirring occasionally.
Assembling the Burritos

Prepare the Filling
In a large bowl, combine the shredded chicken, sliced piquillo peppers, shredded jack cheese, and salsa verde. Mix well.

Fill the Tortillas
Lay a tortilla flat on a clean surface. Spoon some of the cooked rice, black beans, and the chicken filling mixture onto the center of the tortilla. Fold the sides in and roll up tightly to form a burrito. Repeat with remaining tortillas.
Serving the Burritos
