Preparing the Carnitas

Season the Pork
In a bowl, combine salt, black pepper, cumin, chili powder, garlic powder, and onion powder. Rub this mixture all over the pork shoulder.

Cook the Pork
Place the seasoned pork shoulder into a slow cooker. Add the orange juice, lime juice, and bay leaves. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Discard any fat and the bay leaves.
Cooking Rice and Beans

Cook the Rice
In a saucepan, bring the chicken broth to a boil. Add the long grain rice and salt, reduce heat to low, cover and simmer for about 18 minutes or until the rice is tender and liquid is absorbed.

Assembling the Burritos

Prepare Tortillas
Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.

Fill the Burritos
On each tortilla, layer shredded carnitas, cooked rice, black beans, shredded cheese, sour cream, and salsa.

Roll the Burritos
Fold in the sides of the tortilla and roll tightly from the bottom to the top to form a burrito. Repeat with remaining tortillas.
