Method

Marinade Preparation

  1. 1

    Prepare Guajillo Chiles

Remove stems and seeds from guajillo chiles. Rinse them under warm water to soften.

  2. 2

    Blend Marinade

In a blender, combine softened guajillo chiles, garlic cloves, cumin, oregano, lime juice, olive oil, salt, and black pepper. Blend until smooth.

Steak Preparation

  1. 3

    Marinate the Flank Steak

Place flank steak in a large bowl or zip-top bag. Pour the marinade over the steak, ensuring it's well coated. Marinate in the refrigerator for at least 2 hours, preferably overnight.

  2. 4

    Grill the Steak

Preheat the grill to medium-high heat. Remove the steak from the marinade and discard the marinade. Grill the steak for about 5-7 minutes on each side, or until desired doneness is reached.

  3. 5

    Rest the Steak

Once cooked, transfer the steak to a cutting board and let it rest for 10 minutes before slicing.

  4. 6

    Slice the Steak

Slice the steak against the grain into thin strips.

Assembling the Dish

  1. 7

    Prepare the Toppings

While the steak is resting, prepare the toppings by placing shredded lettuce, salsa verde, pico de gallo, and crumbled queso fresco in separate serving bowls.

  2. 8

    Serve

Place sliced carne asada on a serving platter. Serve with shredded lettuce, salsa verde, pico de gallo, and queso fresco on the side for topping.
