Preparation

    Cook the Rice

    In a medium pot, add 1 cup of white rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the water is absorbed. Fluff with a fork and set aside.

    Prepare the Black Beans

    In a small saucepan, heat 1 cup of black beans over medium heat until warmed through. If using canned beans, drain and rinse before heating. Set aside.

    Sauté Onions

    In a skillet over medium heat, add a small amount of oil and sauté the diced onion until translucent, about 5 minutes. Set aside.

    Chop Cilantro

    Wash and chop the cilantro finely. Set aside for garnish.

Assembling the Burrito

    Warm the Tortillas

    Heat the large flour tortillas in a dry skillet over medium heat for about 30 seconds per side until warm and pliable.

    Fill the Burrito

    On each tortilla, layer the following: 1/2 cup of shredded birria beef, 1/4 cup of cooked white rice, 1/4 cup of black beans, 1/4 cup of sautéed onions, and 1/4 cup of shredded jack cheese.

    Add Cilantro

    Sprinkle 2 tablespoons of chopped cilantro on top of the layered ingredients on each burrito.

    Roll the Burrito

    Fold in the sides of the tortilla and roll it up tightly from the bottom to the top. Repeat for each tortilla.

Serving

    Serve with Consume

    Place each burrito on a plate and serve with a side of consume dipping broth. Enjoy!
