Beef Short Ribs

Prepare the Short Ribs
Preheat your oven to 300°F (150°C). Season the beef short ribs all over with salt and black pepper.

Sear the Ribs
In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove them and set aside.

Add Liquid and Simmer
Return the short ribs to the pot. Add beef broth, chipotle peppers, and bay leaves. Bring to a simmer.

Slow Cook
Cover the pot and transfer it to the preheated oven. Cook for about 3 hours or until the meat is tender and easily pulls away from the bone.

Prepare Potatoes
While the ribs are cooking, wash the fingerling potatoes and slice them in half lengthwise.

Season Potatoes
In a large bowl, toss the potatoes with olive oil, chopped thyme, chopped rosemary, garlic powder, salt, and black pepper.

Roast Potatoes
Spread the seasoned potatoes out on a baking sheet in a single layer. Roast in the oven at 400°F (200°C) for about 25-30 minutes, turning halfway through, until golden and crispy.
Slow Roasted Cherry Tomato Salsa

Roast Tomatoes
In a bowl, toss cherry tomatoes with olive oil and salt. Spread them on a baking sheet.

Bake Tomatoes
Roast in the oven at 300°F (150°C) for about 1 hour until they are softened and slightly caramelized.

Add Finishing Touches
Once roasted, remove from oven and mix in chopped basil and balsamic vinegar. Set aside.
Piquillo Crema

Blend Ingredients
In a blender, combine roasted piquillo peppers, sour cream, minced garlic, and lemon juice. Blend until smooth.

Taste the crema and add salt as needed. Blend again to incorporate.
Assembly

Plate the Dish
On a large serving plate, place a generous portion of the chipotle beef short ribs, alongside the herb roasted fingerling potatoes.

Top the ribs with the slow roasted cherry tomato salsa and drizzle with piquillo crema.
