Method

Preparation of Beef

    Season the Beef

    In a large bowl, combine salt, black pepper, cumin, and chili powder. Rub the seasoning mixture all over the beef chuck roast.

    Sear the Beef

    In a large skillet over medium-high heat, heat a little oil. Once hot, sear the beef on all sides until browned, about 5 minutes per side. Remove and set aside.

    Prepare the Cooking Liquid

    In a blender, combine the garlic cloves, lime juice, and beef broth. Blend until smooth.

    Slow Cook the Beef

    Place the seared beef in a slow cooker. Pour the blended liquid over the beef. Cook on low for 8 hours or until the beef is tender and easily shredded.

Serving

    Shred the Beef

    Once cooked, remove the beef from the slow cooker and shred with two forks.

    Prepare the Garnishes

    Finely chop the cilantro and onion. Slice the radish thinly.

    Serve

    Serve the shredded beef in a bowl, topped with chopped cilantro, diced onion, sliced radish, and a drizzle of mojo verde. Enjoy!
