Beef Barbacoa

Prepare the Beef
Cut the beef chuck roast into large chunks. Season with salt and black pepper.

Sear the Beef
In a large skillet over medium-high heat, sear the beef chunks until browned on all sides, about 5-7 minutes.

Slow Cook
Place the seared beef in a slow cooker, add the chopped onion, and pour the blended marinade over the top. Cook on low for 6-8 hours or until the beef is tender and shreds easily.

Shred the Beef
Once cooked, remove the beef from the slow cooker and shred it with two forks. Return the shredded beef to the sauce in the slow cooker and stir well.

Sauté Onion and Garlic
In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until softened, about 5 minutes.

Finish Cooking
Continue cooking the beans for another 5-10 minutes until heated through and slightly thickened.
Herb Aioli

Mix Ingredients
In a bowl, combine mayonnaise, chopped cilantro, chopped parsley, minced garlic, and lemon juice. Mix well.

Add salt to taste and stir until well combined. Refrigerate until ready to serve.
Assembly and Serving

Assemble the Dish
On a plate, layer the refried beans, followed by the barbacoa beef. Top with crumbled queso fresco, diced Spanish onion, and chopped cilantro.

Finish by drizzling the herb aioli over the top and serve immediately.
