Fried Shallots

Prepare the Shallots
Thinly slice the shallots into rings and set aside.

Heat the Oil
In a deep pan, heat 1 cup of vegetable oil over medium heat.

Fry the Shallots
Once the oil is hot, add the sliced shallots in batches. Fry until golden brown and crispy, about 2-3 minutes.

Drain and Cool
Remove the fried shallots from the oil and drain on a paper towel. Season with salt to taste.
Fried Garlic

Prepare the Garlic
Thinly slice the garlic cloves and set aside.

Heat the Oil
In a separate pan, heat 1 cup of vegetable oil over medium heat.

Fry the Garlic
Add the sliced garlic to the oil and fry until golden and fragrant, about 1-2 minutes. Watch closely to avoid burning.

Prepare the Scallions
Wash and chop the scallions into fine pieces, using both the white and green parts.
Garlic Confit

Prepare the Garlic
Peel the garlic cloves and place them in a small saucepan.

Add Olive Oil
Pour 1 cup of olive oil over the garlic cloves, ensuring they are fully submerged.

Add Thyme
Add 1 tablespoon of fresh thyme to the saucepan.

Cook the Confit
Cook over low heat for about 30 minutes, until the garlic is tender and golden. Do not let it boil.

Cool and Store
Let the garlic confit cool before transferring it to a jar. Store in the refrigerator.
