1. Prepare the Ingredients
Slice the chicken breast and skirt steak into thin strips. Slice bell peppers and onion into strips.
2. Cook the Meat
In a large skillet, heat olive oil over medium-high heat. Add the sliced chicken and beef, sprinkle with fajita seasoning, and cook until browned and cooked through, about 8-10 minutes. Remove from skillet and set aside.
3. Sauté the Vegetables
In the same skillet, add the sliced bell peppers and onions. Sauté for about 5-7 minutes, until softened.
4. Cook the Rice
Prepare rice according to package instructions.
5. Assemble the Fajitas
Warm the flour tortillas in a separate skillet or microwave. On each tortilla, layer rice, the cooked meat mixture, sautéed vegetables, pico de gallo, shredded lettuce, crema mexicana, and guacamole.
6. Serve
Roll up the tortillas and serve immediately, with extra pico de gallo and guacamole on the side.
