    Prepare the Ingredients

    Gather all ingredients and prepare the ribeye steak by seasoning it with salt and pepper. Marinate the shrimp in lime juice, garlic, and a pinch of salt.

    Grill the Ribeye

    Preheat the grill to high heat. Grill the ribeye steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the grill and let it rest.

    Grill the Shrimp

    On the same grill, cook the marinated shrimp for about 2-3 minutes on each side until they turn pink and opaque. Remove from the grill.

    Grill the Onions

    Add sliced onions to the grill and cook for 2-3 minutes until they are tender and slightly charred.

    Prepare the Enchiladas

    In a baking dish, fill tortillas with shredded chicken, roll them up, and place them seam-side down. Pour tomatillo sauce over the enchiladas and sprinkle with cheese. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes until the cheese is melted.

    Assemble the Plate

    On a plate, serve the grilled ribeye, shrimp, and grilled onions alongside the enchiladas. Add a side of rice, refried beans, hot pepper, guacamole, and drizzle with crema mexicana.
