    Prepare the Dough

    In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat. Once boiling, remove from heat and stir in the flour until well combined. Let the mixture cool slightly, then add the eggs one at a time, mixing well after each addition until the dough is smooth and elastic.

    Heat the Oil

    In a large, deep skillet or pot, heat the oil to 375°F (190°C). Use a deep-fry thermometer to ensure the oil reaches the right temperature.

    Pipe the Churros

    Transfer the dough to a piping bag fitted with a star tip. Carefully pipe 4 to 6-inch strips of dough directly into the hot oil, cutting them with scissors as you go.

    Fry the Churros

    Fry the churros until they are golden brown, about 2-3 minutes per side. Remove them from the oil and place on paper towels to drain excess oil.

    Coat in Sugar

    While the churros are still warm, roll them in a mixture of sugar and cinnamon until fully coated.

    Serve

    Serve the churros warm with chocolate sauce or dulce de leche for dipping.
