Preparation

Prepare the Rice
If not already cooked, prepare the rice according to package instructions. Set aside.

Prepare the Beans
Rinse and drain the canned black beans. Set aside.

Chop the Vegetables
Dice the bell peppers, red onion, and zucchini. If using frozen corn, thaw it out. Wash and chop the fresh spinach.
Cooking

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for 2-3 minutes until translucent. Add the bell peppers, zucchini, and corn and cook for an additional 5 minutes.

Add Beans and Spinach
Stir in the black beans, fresh spinach, cumin, chili powder, salt, and pepper. Cook for another 3-4 minutes until the spinach wilts. Remove from heat.
Assembling the Burritos

Fill the Tortillas
Lay out a large flour tortilla on a clean surface. In the center, layer approximately 1/2 cup of cooked rice, a generous scoop of the vegetable and bean mixture, and if desired, top with shredded cheese.

Roll the Burrito
Fold in the sides of the tortilla and then roll it tightly from the bottom up. Repeat with the remaining tortillas.
Serving

Serve the Burritos
Place the rolled burritos on a plate. Optionally, serve with sour cream and salsa on the side. Enjoy your delicious vegetarian burrito!
