Preparing the Fried Rolled Tortillas

Prepare the Filling

In a large bowl, mix the shredded beef or chicken with cheddar cheese until well combined.

Assemble the Tortillas

Take a flour tortilla, place 2-3 tablespoons of the filling mixture in the center, and roll tightly. Repeat with remaining tortillas.

Fry the Tortillas

In a large skillet, heat the vegetable oil over medium heat. Once hot, carefully add the rolled tortillas and fry until golden brown and crispy, about 2-3 minutes per side. Remove from the oil and place on paper towels to drain excess oil.

Making the Green Sauce

Prepare the Ingredients

Husk and rinse the tomatillos. Remove the stem from the jalapeño and garlic cloves.

Blend the Sauce

In a blender, combine tomatillos, jalapeño, garlic, diced onion, cilantro, and lime juice. Blend until smooth. Adjust seasoning if necessary.

Serving the Dish

Plate the Dish

On a serving platter, arrange the fried rolled tortillas. Top generously with green sauce and sprinkle with queso fresco.
