Searing the Pork

In a large pot, heat olive oil over medium-high heat. Add the pork cubes and sear until browned on all sides, about 5-7 minutes.

Cooking the Vegetables

Add the chopped onion, minced garlic, and green bell pepper to the pot. Sauté until the vegetables are soft, about 5 minutes.

Making the Green Sauce

Stir in the chopped tomatillos, cilantro, lime juice, chicken broth, salt, and black pepper. Bring to a simmer.

Simmering the Pork

Cover the pot and reduce the heat to low. Let the mixture simmer for about 1.5 to 2 hours, or until the pork is tender.

In a medium saucepan, combine white rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is cooked.

In a separate pot, combine the rinsed black beans, cumin, and salt. Heat over medium until warmed through, about 5 minutes.

In a mixing bowl, combine all-purpose flour, baking powder, and salt. Cut in shortening or lard until the mixture resembles coarse crumbs. Gradually add water until a dough forms.

Rolling and Cooking the Tortillas

Divide the dough into 8 equal portions. Roll each portion into a ball, then flatten it into a circle about 6 inches in diameter. Cook each tortilla on a hot, dry skillet for about 1 minute on each side, or until lightly browned.
