Method

Taco Filling

  1. 1

    Cook the Beef

In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes, breaking it apart with a spatula.

  2. 2

    Add Vegetables

Add the chopped onion, garlic, and bell pepper to the skillet. Sauté for 3-4 minutes until the vegetables are softened.

  3. 3

    Season the Filling

Stir in taco seasoning, salt, black beans, and corn. Cook for an additional 5 minutes, stirring occasionally, until heated through.

Enchilada Sauce

  1. 4

    Make the Sauce

In a medium saucepan, heat olive oil over medium heat. Stir in the tomato sauce, chili powder, cumin, garlic powder, salt, and water. Bring to a simmer and cook for 10 minutes, stirring occasionally.

Assembly

  1. 5

    Prepare the Tortillas

Warm the corn tortillas in a dry skillet for about 30 seconds on each side until pliable.

  2. 6

    Assemble the Tacos

Spoon the taco filling into each tortilla. Roll them up tightly and place them seam side down in a baking dish.

  3. 7

    Add Sauce

Pour the enchilada sauce over the rolled tacos, ensuring they are well covered.

  4. 8

    Top with Cheese

Sprinkle shredded cheese on top of the sauce.

  5. 9

    Bake

Preheat the oven to 180°C (350°F). Bake the enchiladas for 20-25 minutes until hot and bubbly.

Serving

  1. 10

    Garnish

Remove from the oven and let cool for a few minutes. Top with sour cream, shredded lettuce, diced tomatoes, and avocado slices.

  2. 11

    Serve

Serve the enchiladas hot with additional toppings on the side.
