Preparing the Cheese Mixture

Cook the Chorizo
In a skillet over medium heat, cook the chorizo until browned and fully cooked, about 5-7 minutes. Drain excess fat and set aside.

In a mixing bowl, combine the Chihuahua cheese, Monterey Jack cheese, and cream cheese. Stir until well combined.

Add the cooked chorizo to the cheese mixture and stir until evenly distributed.
Cooking the Queso Fundido

Melt the Cheese
Transfer the cheese and chorizo mixture to an oven-safe dish. Place it in a preheated oven at 350°F (175°C) and bake for 15-20 minutes, or until the cheese is bubbly and melted.
Preparing the Tortillas

Warm the Tortillas
While the cheese is melting, warm the flour tortillas in a skillet over low heat for about 1-2 minutes on each side until soft and pliable.

Garnish and Serve
Once the queso fundido is melted and bubbly, remove it from the oven. Garnish with fresh cilantro, a dollop of sour cream, and sliced jalapeños. Serve immediately with warm tortillas.
