Preparation of Ingredients

    Prepare the Chicken

    Grill the chicken breast until fully cooked, about 6-7 minutes on each side or until it reaches an internal temperature of 165°F (75°C). Let it rest for a few minutes, then slice it into strips.

    Chop Vegetables

    Dice the onion and slice the mushrooms. Set them aside.

    Cook the Chorizo

    In a skillet over medium heat, add the chorizo. Cook for about 5 minutes, breaking it up with a spatula until it is browned and cooked through.

Cooking the Dish

    Sauté Vegetables

    In the same skillet with the cooked chorizo, add the diced onion and sliced mushrooms. Sauté for about 5-7 minutes until the onions are translucent and the mushrooms are tender.

    Combine Ingredients

    Add the grilled chicken strips back into the skillet, mixing well with the sautéed onion, mushrooms, and chorizo. Allow everything to heat through, about 2-3 minutes.

    Melt the Cheese

    Sprinkle the cheese evenly over the chicken and vegetable mixture. Cover the skillet and reduce the heat to low. Let it cook for about 2-3 minutes, or until the cheese is melted.

    On a serving plate, place a scoop of cooked rice and a scoop of black beans. Top with the chicken, onion, mushroom, and chorizo mixture. Serve with warm tortillas on the side.
