Preparation of Steak

    Cook the Steak

    Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Season the steak with salt and black pepper. Cook the steak for about 4-5 minutes per side or until desired doneness. Remove from skillet and let it rest for 5 minutes before slicing.

Sauce Preparation

    Prepare the Sauce

    For green sauce, blend tomatillos, jalapeño, onion, and garlic until smooth. For red sauce, blend tomatoes, jalapeño, onion, and garlic until smooth. Adjust seasoning with salt.

    Heat the Sauce

    In the same skillet used for the steak, add another tablespoon of olive oil and the blended sauce. Simmer for about 5-7 minutes until slightly thickened.

Eggs Cooking

    Fry the Eggs

    In a separate skillet, heat a little olive oil over medium heat. Crack the eggs into the skillet and cook to your preferred doneness (sunny-side up or over-easy).

Assemble the Dish

    Plate the Huevos Rancheros

    On a plate, place the cooked rice and beans on the side. Lay the tortillas flat, top each with a fried egg, slices of steak, and generously pour the sauce over the top. Garnish with chopped cilantro.
