Preparation of Caramel Sauce

Make the Caramel
In a medium saucepan, combine the granulated sugar and water. Stir gently to combine. Place over medium heat and cook without stirring until the sugar dissolves and turns a golden brown color, about 8-10 minutes.

Coat the Flan Mold
Immediately pour the caramel into a round flan mold (or individual ramekins), tilting to coat the bottom evenly. Set aside to cool and harden.
Preparation of Flan Base

Mix Ingredients
In a blender, combine the eggs, sweetened condensed milk, evaporated milk, vanilla extract, and 3 tablespoons of granulated sugar. Blend on medium speed until smooth and well combined, about 1-2 minutes.

Pour into Mold
Pour the egg mixture over the hardened caramel in the flan mold.
Cooking the Flan

Prepare Water Bath
Preheat your oven to 350°F (175°C). Place the flan mold in a larger baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the flan mold.

Bake the Flan
Carefully place the baking dish in the preheated oven. Bake for about 50-60 minutes, or until the flan is set and a knife inserted in the center comes out clean.

Cool and Refrigerate
Remove the flan from the oven and allow it to cool to room temperature. Then, refrigerate for at least 4 hours or overnight.
Serving the Flan

Unmold the Flan
To serve, run a knife around the edges of the flan to loosen it. Invert the flan onto a serving plate. The caramel sauce will flow over the top.

Slice and Serve
