Prepare the Enchiladas

Preheat your oven to 350°F (175°C). In a baking dish, spread 1/4 cup of enchilada sauce on the bottom. Take one corn tortilla, fill it with 1/2 cup of shredded chicken and 1/4 cup of shredded cheese, then roll it up tightly. Place it seam-side down in the baking dish. Repeat with the second tortilla.

Add Sauce and Cheese

Pour the remaining enchilada sauce over the rolled tortillas in the baking dish. Sprinkle the remaining shredded cheese on top.

Bake

Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly.

Garnish

Once baked, remove from the oven and let it cool for a few minutes. Drizzle sour cream over the top and sprinkle chopped cilantro before serving.

Cook the Filling

In a skillet over medium heat, cook the ground beef or shredded chicken until fully cooked. Drain excess fat if necessary. Season with salt and your choice of taco seasoning (not listed in ingredients).

Assemble the Taco

Place the taco shell upright on a plate. Fill the shell with the cooked meat, then layer with shredded lettuce, diced tomatoes, and shredded cheese. Top with a dollop of sour cream and a drizzle of salsa.

Prepare the Beans

In a small saucepan, heat the canned black beans over medium heat. Stir in cumin and salt to taste. Cook until heated through, about 5 minutes.

Combine Rice and Beans

In a bowl, mix the cooked white rice with the warmed black beans. Stir in chopped cilantro for added flavor.
