    Prepare Filling

    In a bowl, mix shredded chicken, chopped onions, and 1/4 cup of fresh cilantro. Set aside.

    Assemble Enchiladas

    Preheat the oven to 375°F (190°C). Warm corn tortillas in a pan with olive oil until soft. Fill each tortilla with chicken mixture, roll them up, and place seam side down in a baking dish.

    Add Sauce and Cheese

    Pour red enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.

    Bake

    Bake in the preheated oven for 20 minutes, or until cheese is melted and bubbly.

Tamal

    Soak Corn Husks

    Soak corn husks in warm water for at least 30 minutes until pliable.

    Prepare Masa

    In a large bowl, combine masa harina, baking powder, and salt. Gradually add chicken broth and vegetable oil, mixing until a soft dough forms.

    Fill Tamales

    Take a soaked corn husk, spread about 1/4 cup of masa dough on it, add a tablespoon of shredded pork or chicken in the center, and fold the husk over to close.

    Steam Tamales

    Place tamales upright in a steamer pot and steam for about 1 to 1.5 hours, or until masa is firm and cooked through.

Rice and Beans

    Cook Rice

    Rinse white rice under cold water until water runs clear. In a pot, heat olive oil over medium heat, add minced garlic and cumin, and sauté for 1 minute. Add rice and 2 cups of water, bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.

    Prepare Beans

    In a separate pot, heat black beans over medium heat, season with salt, and simmer for about 10 minutes until heated through.

    Serve

    Fluff the rice with a fork, and serve with black beans on the side. Garnish both with fresh cilantro.
