Enchilada Filling

    Cook the Ground Beef

    In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Sauté the Vegetables

    Add the chopped onion, minced garlic, and green bell pepper to the skillet with the beef. Sauté for another 5 minutes until the vegetables are tender.

    Add Tomatoes and Seasoning

    Stir in the canned diced tomatoes and taco seasoning. Mix well and let it simmer for about 5 minutes.

    Mix in Beans and Corn

    Add the black beans and corn to the skillet. Stir to combine and heat through for an additional 3-4 minutes.

Enchilada Assembly

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare Tortillas

    In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

    Fill the Tortillas

    Place about 1/4 cup of the filling mixture in each tortilla and roll them up tightly. Place seam side down in a greased baking dish.

    Add Enchilada Sauce and Cheese

    Pour the enchilada sauce evenly over the rolled tortillas, then sprinkle shredded cheese on top.

    Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
