Method

Prepare Tortilla Chips

    Fry Tortillas

    Cut the corn tortillas into quarters. Heat the vegetable oil in a large frying pan over medium heat. Once hot, add the tortilla pieces and fry until they are golden brown and crispy, about 2-3 minutes. Remove and place on paper towels to drain excess oil. Sprinkle with salt immediately.

Make Salsa Roja

    Prepare Ingredients

    In a blender, combine the tomatoes, serrano chilies, onion, garlic cloves, cilantro, lime juice, and salt.

    Blend Salsa

    Blend until smooth. If desired, add a little water for a thinner consistency. Adjust salt to taste.

    Cook Salsa

    Pour the blended salsa into a saucepan and bring to a simmer over medium heat. Cook for about 10 minutes, stirring occasionally, until slightly thickened.

Cook Toppings

    Cook Skirt Steak

    Season the skirt steak with salt and pepper. Heat a grill or skillet over high heat and cook the steak for about 3-4 minutes on each side for medium-rare. Once cooked, let it rest for a few minutes before slicing thinly.

    In another skillet, fry the eggs sunny-side up or to your preference.

Assemble Chilaquiles

    Layer Components

    On a large plate, spread a generous layer of fried tortilla chips. Pour the warm salsa roja over the chips, ensuring they are well coated.

    Add Toppings

    Top with fried eggs, sliced skirt steak, and crumbled queso fresco. Optionally, add slices of avocado on the side.
