Filling Preparation

Prepare the Filling
In a mixing bowl, combine the shredded chicken, cream cheese, sour cream, 1 cup of enchilada sauce, chopped green onions, salt, and black pepper. Mix until everything is well combined and smooth.

Preheat Oven
Preheat your oven to 350°F (175°C).

Fill the Tortillas
Take a flour tortilla and place about 1/2 cup of the chicken filling in the center. Roll the tortilla tightly to encase the filling and place seam-side down in a greased 9x13 inch baking dish.

Repeat Filling
Repeat the filling and rolling process for the remaining tortillas, placing them side by side in the baking dish.

Add Sauce and Cheese
Pour the extra 1/2 cup of enchilada sauce over the rolled enchiladas and sprinkle the shredded cheese on top.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
