Method
Shrimp Preparation
Sauté the Aromatics
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 medium chopped onion and 3 minced garlic cloves. Sauté until the onion is translucent, about 3-4 minutes.
Cook the Shrimp
Add 1 pound of jumbo shrimp to the skillet. Season with 1 teaspoon of salt and 1 teaspoon of black pepper. Cook for 2-3 minutes until the shrimp turn pink.
Add the Hot Sauce
Pour in 1 cup of Camarones a la Diabla hot sauce. Stir well to combine and let it simmer for an additional 2-3 minutes until the shrimp are fully cooked and coated in sauce.
Rice Preparation
Cook the Rice
In a medium saucepan, combine 1 cup of long-grain rice, 2 cups of water, and 1 teaspoon of salt. Bring to a boil, then reduce heat to low and cover. Cook for 18-20 minutes until the rice is tender and water is absorbed.

Warm the Tortillas
In a dry skillet over medium heat, warm 8 corn tortillas for about 30 seconds on each side until pliable.
Ensalada Fresca Preparation
Prepare the Salad
In a bowl, combine 2 cups of chopped romaine lettuce, 1 diced tomato, and 1 thinly sliced small red onion. Drizzle with 2 tablespoons of lime juice, 1 tablespoon of olive oil, and salt to taste. Toss to combine.
