Prepare the Burrito Filling

Grill the Chicken
Season the chicken breasts with salt and pepper. Grill over medium heat for about 6-7 minutes on each side or until fully cooked. Let them rest for 5 minutes before slicing into strips.

Cook the Mexican Rice
Prepare the Mexican rice according to package instructions, typically by simmering in water until tender. Fluff with a fork once done.

Prepare Black Beans
If using canned black beans, rinse and drain them. Heat them in a small saucepan over medium heat until warmed through.

Mix the Salad
In a large bowl, combine the mixed greens with some of the honey mustard dressing (to taste) and toss gently.

Combine Ingredients
In a small bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, salt, and pepper until well combined.
Assemble the Burrito Salad

Fill the Tortillas
Lay a flour tortilla flat on a clean surface. Add a portion of grilled chicken, Mexican rice, black beans, and dressed greens in the center of the tortilla.

Roll the Tortilla
Fold in the sides of the tortilla and then roll it from the bottom up to form a burrito shape. Repeat with the remaining tortillas.
