Method

Preparation of Filling

  1. 1

In a skillet over medium heat, add the chopped onions and bell peppers. Sauté until they are soft and translucent, about 5-7 minutes.

  2. 2

Add the cooked carnitas to the skillet with the onions and bell peppers. Stir until everything is well combined and heated through, about 3-5 minutes.

  3. 3

Remove the skillet from heat and set aside for assembly.

Assembling the Burrito

  1. 4

Lay a flour tortilla flat on a clean surface. Spread 0.5 cup of refried beans evenly over the center of the tortilla.

  2. 5

Spoon the carnitas, onion, and bell pepper mixture over the beans, followed by the diced tomatoes.

  3. 6

Carefully fold in the sides of the tortilla and then roll it up from the bottom to the top to enclose the filling. Ensure the burrito is tightly rolled.

Topping the Burrito

  1. 7

Place the rolled burrito on a serving plate. Pour the cheese dip generously over the top of the burrito.

  2. 8

Drizzle the creamy green sauce on top of the cheese dip.

  3. 9

Finish by adding a generous spoonful of pico de gallo on top.
