1. Prepare the Apples

Wash and chop the fresh apples into quarters, removing any stems and bad spots.

2. Juicing

Place chopped apples in a juicer or press to extract the juice into a large pot or fermenter.

3. Mix the Ingredients

In a large pot, combine the apple juice, water, sugar, acid blend, and pectic enzyme. Stir until the sugar is fully dissolved.

4. Add Campden Tablets

Crush the Campden tablets and add them to the mixture. Let it sit for 24 hours to kill any wild yeast.

5. Add Yeast

After 24 hours, sprinkle the yeast over the mixture and stir gently to combine.

6. Fermentation

Cover the fermenter with an airlock and allow the cider to ferment in a cool, dark place for 4 to 6 weeks.

7. Bottling

Once fermentation is complete, siphon the cider into clean bottles, leaving some space at the top, and seal with caps or corks.

8. Aging

Allow the bottles to age in a cool, dark place for at least another month for the flavors to develop.
