    Prepare the Horseradish Mashed Yukons

    Peel and cut Yukon Gold potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and mash with butter, heavy cream, horseradish, and salt. Set aside.

    Make Balsamic Onions

    Slice red onions and sauté in olive oil over medium heat until soft. Add balsamic vinegar, salt, and pepper. Cook until reduced and caramelized, about 10-15 minutes. Set aside.

    Prepare Asparagus

    Trim asparagus and toss with olive oil, salt, and pepper. Grill or roast until tender, about 8-10 minutes.

    Roast Garlic for the Reduction

    Roast garlic cloves in olive oil until golden and soft, about 15 minutes. Combine roasted garlic and red wine in a saucepan and simmer until reduced by half. Whisk in butter and season with salt and pepper.

Grilling the Filet Mignon

    Preheat grill to high heat. Rub filet mignon with olive oil, salt, and pepper. Grill for 4-5 minutes on each side for medium-rare, adjusting time for desired doneness.
