    Slice the Potatoes

    Wash and slice the russet potatoes into thin, even slices using a mandoline or sharp knife, about 1/8 inch thick.

    Soak the Potatoes

    Place the sliced potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the soaked potatoes and pat them dry with paper towels to remove as much moisture as possible.

Frying

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

    Fry the Chips

    Carefully add a handful of potato slices to the hot oil, being careful not to overcrowd the pot. Fry until golden brown and crispy, about 3-5 minutes.

    Drain and Season

    Use a slotted spoon to remove the chips from the oil and transfer them to a paper towel-lined plate to drain excess oil. While still hot, sprinkle with sea salt and any optional seasonings.

Serving

    Place the kettle chips in a basket and serve warm as a crunchy snack or side dish.
