Prepare the Steak
Season the sirloin steak with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the steak and cook for 4-5 minutes on each side for medium-rare. Remove from heat, let it rest for a few minutes, then slice into thin strips.

Roast the Tomatoes
In the same skillet, add the cherry tomatoes and cook for about 5 minutes, until they are blistered and slightly softened. Remove and set aside.

Cook the Hashbrowns
In another skillet, heat the remaining tablespoon of olive oil over medium heat. Add the hashbrown potatoes and cook for 10-12 minutes, stirring occasionally, until golden brown and crispy. Season with salt and pepper.

Scramble the Eggs
In a bowl, whisk the eggs with a pinch of salt. Pour into a non-stick skillet over medium heat and scramble them gently until just set, about 3-4 minutes.

In a large bowl, layer the crispy hashbrowns, scrambled eggs, sliced steak, and roasted tomatoes. Drizzle with Hollandaise sauce and garnish with fresh parsley.
