Pancake Batter

Method

Directions

  1. 1

    Prepare the Pancake Batter

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

  2. 2

In another bowl, mix the pumpkin puree, milk, eggs, vanilla extract, and melted butter until smooth.

  3. 3

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are okay.

  4. 4

    Cook the Pancakes

Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.

  5. 5

Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for an additional 2 minutes or until golden brown.

  6. 6

    Prepare the Cream Cheese Icing

In a small bowl, beat together 4 oz of cream cheese, 1/2 cup of powdered sugar, and 2 tbsp of milk until smooth.

  7. 7

    Prepare the Cinnamon Butter

In a small bowl, mix 1/2 cup of softened butter with 1 tsp of ground cinnamon and 2 tbsp of powdered sugar until creamy.

  8. 8

Serve the pancakes warm, drizzled with cream cheese icing and topped with cinnamon butter.
