In a shallow dish, mix together flour and cornstarch. Remove marinated chicken from the fridge, letting excess buttermilk drip off, then dredge each piece in the flour mixture, ensuring a good coating.

Heat oil in a large skillet over medium-high heat. Once hot, carefully add the dredged chicken and fry for about 5-7 minutes on each side or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.
