Marinate the Chicken
In a bowl, combine the boneless chicken breasts and buttermilk. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare the Coating
In a separate bowl, mix together the flour, cornstarch, salt, black pepper, garlic powder, and onion powder.

Heat the Oil
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Chicken
Remove the marinated chicken from the buttermilk and allow excess to drip off. Dredge each piece in the flour mixture, ensuring they are well-coated.

Fry the Wings
Fry the coated chicken pieces in batches, for about 5-7 minutes or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Toss in Sauce
In a large bowl, toss the fried wings with your choice of buffalo sauce, spicy honey, or teriyaki sauce until well coated.

Serve the boneless wings hot with celery sticks and your choice of ranch or blue cheese dressing.
