    Prepare the Grapes

    Harvest ripe Pinot Grigio grapes, ensuring they are free from rot and imperfections. Remove stems and wash the grapes thoroughly to eliminate any dirt or residues.

    Crush the Grapes

    In a clean fermentation vessel, crush the grapes to release their juices. You can use a wine press or simply crush them by hand. Ensure that the skins are included to enhance flavor and aroma.

    Add Water and Yeast

    Add 1 liter of filtered water to the crushed grapes. Then sprinkle 5 grams of wine yeast over the surface of the grape mixture. Stir gently to combine and activate the yeast.

    Fermentation

    Cover the fermentation vessel with a clean cloth and let it sit in a cool, dark place. Allow the mixture to ferment for 7 to 14 days, stirring daily to prevent mold formation and to ensure even fermentation.

    Strain the Mixture

    Once fermentation is complete, strain the mixture through a fine mesh strainer or cheesecloth into a clean container, separating the liquid from the solids. This liquid is your base wine.

    Adjust Sweetness (optional)

    Taste the wine. If you prefer a sweeter profile, dissolve 50 grams of sugar in a small amount of warm water and add it to the wine, stirring gently to combine.

    Add Sulfur Dioxide (optional)

    If desired, add 0.5 grams of sulfur dioxide to the wine for preservation, especially if you plan to age it. This step is optional but recommended for longer storage.

    Bottle the Wine

    Transfer the wine into sanitized bottles, leaving some space at the top. Seal the bottles with corks and label them with the date.
