Method
Pastry Preparation
- 1
Make the Pastry Dough
Gradually add ice water, a tablespoon at a time, mixing until the dough comes together. Avoid overworking the dough. Form it into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Filling Preparation
- 2
Prepare the Apples
Peel, core, and slice the apples into quarters. Set aside.
- 3
Caramelize the Apples
In a 10-inch oven-safe skillet, melt the unsalted butter over medium heat. Add the granulated sugar and stir until dissolved. Add the apple quarters and cook for about 10-15 minutes, turning occasionally, until they are tender and caramelized.
- 4
Add Vanilla
Stir in the vanilla extract, mixing well with the caramelized apples.
Assembly and Baking
- 5
Preheat the Oven
Preheat your oven to 375°F (190°C).
- 6
Roll Out the Pastry
On a lightly floured surface, roll out the chilled pastry dough into a circle that is about 12 inches in diameter.
- 7
Assemble the Tarte Tatin
Carefully place the rolled pastry over the caramelized apples in the skillet, tucking the edges down around the apples.
- 8
Bake
Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
- 9
Invert and Serve
Remove from the oven and let it cool for about 5 minutes. Carefully invert the tart onto a serving plate. Serve warm, optionally with whipped cream or vanilla ice cream.
