    In a medium bowl, beat together the cream cheese and powdered sugar until smooth. Stir in the vanilla extract. Fold in the chopped strawberries and set aside.

    In a shallow bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and a pinch of salt until well combined.

    Take a slice of brioche bread and spread a generous amount of the cream cheese mixture on one side. Top with another slice of brioche to create a sandwich. Repeat with the remaining slices.
