For the Beggars Purse

Prepare the Filling
In a mixing bowl, combine the smoked whitefish, softened cream cheese, chopped chives, lemon zest, everything bagel seasoning, salt, and black pepper. Mix until smooth and well combined.

Assemble the Purse
Place a wonton wrapper on a clean surface. Spoon about 1 tablespoon of the filling into the center of the wrapper. Wet the edges of the wrapper with a little water, then gather the corners and pinch them together to form a purse. Repeat with the remaining wrappers and filling.

Cook the Purse
In a large pot, bring water to a gentle boil. Carefully drop the purses into the boiling water and cook for about 2-3 minutes, or until they float to the surface. Remove with a slotted spoon and set aside.
For the Buttermilk-Dill Sauce

Prepare the Sauce
In a small bowl, whisk together buttermilk, mayonnaise, chopped dill, and garlic powder. Season with salt and black pepper to taste. Mix well until smooth and creamy.
To Serve

Plate the Dish
Place the cooked beggars purses on a serving platter. Drizzle with the buttermilk-dill sauce and top with smoked salmon caviar. Garnish with fresh dill sprigs.
