Method

Preparation of Fish

  1. 1

    Prepare the Salmon

Using a sharp knife, finely dice the fresh salmon fillet into small cubes. Ensure that the salmon is very fresh and of sushi-grade quality.

Chopping Vegetables

  1. 2

    Chop the Shallot and Cucumber

Peel and finely chop the shallot. Remove the skin from the cucumber and dice it into small cubes. Make sure all vegetables are chopped to a similar size for even mixing.

  2. 3

    Prepare the Chives and Capers

Finely chop the chives and rinse the capers under cold water to remove excess salt. Set aside.

Mixing Ingredients

  1. 4

    Combine Ingredients

In a mixing bowl, combine the diced salmon, chopped shallot, cucumber, chives, and capers. Mix gently to combine without mashing the salmon.

  2. 5

    Add Condiments

Drizzle in the olive oil, lemon juice, and Dijon mustard. Season with salt and black pepper to taste. Stir gently until all ingredients are well coated.

Plating

  1. 6

    Serve the Tartare

Using a ring mold, carefully plate the salmon tartare on individual serving plates. Garnish with fresh microgreens or arugula on top.

  2. 7

    Final Touches

Drizzle a little extra olive oil around the plate and serve immediately with crusty bread or crackers.
