Prepare the Vegetables
Preheat your oven to 425°F (220°C). Wash and cut the zucchini into 1/2-inch thick slices. Peel and slice the onion into thin rings.

Caramelize the Onions
In a pan over medium heat, add 1 tablespoon of olive oil. Once hot, add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes. Set aside.

Roast the Zucchini
On a baking sheet, arrange the sliced zucchini in a single layer. Drizzle with olive oil, and sprinkle with salt and black pepper. Toss to coat evenly and spread them out. Roast in the preheated oven for about 20-25 minutes, until tender and slightly caramelized.
Making the Aioli Mojo Verde

Prepare the Aioli
In a food processor, combine mayonnaise, parsley, garlic, lemon juice, olive oil, salt, and black pepper. Blend until smooth and well combined. Adjust seasoning to taste.
Assembly

Combine and Serve
Once the zucchini is roasted, remove from the oven and layer the caramelized onions over the zucchini. Sprinkle the Swiss cheese on top and return to the oven for an additional 5 minutes, or until the cheese is melted. Serve warm with the aioli mojo verde drizzled on top.
